塩麹を使ったポークリエット
塩麹料理、第二弾＾＾
前から一度作ってみたかったポークリエットに
塩麹を使ってみましたよ♪
リエットとは、脂身の多いお肉とハーブや香味野菜を
肉の繊維がホロホロになるまで煮込んで
ペーストっぽくほぐしたフランスの保存食。
イメージとしてはコンビーフみたいな感じでしょうか。
オーソドックスな作り方は、たっぷりのラードを混ぜ込むみたいですが、
そんなの怖くて無理（笑）
なので、今回はチャーシュー用に購入した肩ロースを使いました。
あっさり仕上げです＾＾
一応ざっと作り方を記載します。
＜作り方＞
１．豚肩ロース300gほどに塩麹大さじ２をまぶし、冷蔵庫で一晩寝かせる。
２．煮込み鍋につぶしたニンニク２片とオリーブオイルを入れて火にかけ香りを出す。
３．大き目の角切りにした肉を焼き付けて、表面に焼き色がついたら
たまねぎ1/2個、セロリ1/2本をざく切りにしたものを加え更に炒める。
４．野菜がしんなりしたら白ワイン1カップを加え、汁気がなくなるまで加熱。
その後水をひたひたまで入れて、ローリエ、タイムなど好みのハーブを入れ、
蓋をし、1～2時間、肉がホロホロになるまで煮込む。
５．汁気を切った具をフードプロセッサにかけ、煮汁と塩コショウを混ぜ込んで
好みの固さに調節する（冷めると固まるので熱いうちはちょっと緩めに仕上げておく）。
６．一晩寝かせたら出来上がり～。
日曜に仕込んで、一晩寝かせ、昨日試食。
ちょっと手抜きというか、初めてだったので勘で作ってみましたが
お肉の食感も残りつつ、セロリやたまねぎも香って
脂っこくなくさっぱり食べられるやさしい味のリエットになりました＾＾
白ワインにもよく合います。
しかしもうちょっとハーブとスパイスを効かせればよかったかなぁ。
粗く刻んだブラックペッパーとか。
塩麹の効果ですが、
まぶして寝かせることで、たぶん煮込み時間が短縮できたと思います。
かなり柔らかくなるんですよね、熟成されて。
そして煮込んでいる間からすでにおいしい下味がついていました＾＾
前回のビーフシチュといい、塩麹はお肉との相性がいいですね。
今日はスーパーで見切り品のブリカマを買ってきました。
さて麹漬けのブリカマはどうなりますかねぇ。
